Sfogliatella (puff pastry filled with ricotta and candied fruit) of Conca dei Marini was born by chance thanks to a nun’s (of the local Saint Rosa monastery) inventiveness, who found herself to have more paste than she needed to prepare a cake, the particular taste of blood pudding, which is the mix of chocolate, candied fruit and swine blood, migliaccio of Praiano, typical dish of Carnival day, the so many Christmas cakes, such as mostaccioli, prepared with must, or susamielli, with honey and candied fruit, including also the famous colatura di alici, generated by roman garum, all these are the most genuine expression of the territory, the one which is better preserved because it escaped from adaptation to visitors’ tastes.
Rural world products, furthermore, became precious ingredients for soups, which went well together with the best parts of the pig, and which were preserved in the cellar to use them on the most important occasions.
The door of the itinerary in Cetara, allows to go through the taste route reaching each part of the territory, always discovering a new dish or recognizing a different taste in a dish already tasted somewhere else.
